Using the slow cooker can be a lifesaver! I love being able to dump my ingredients in the slow cooker, and let it do all the work for me. I cook with chicken and beef a lot but sometimes like to pick up some pork chops or a pork loin when I’m at the store for a change. This pineapple pork loin is so easy and delicious, and I make it at least once a month!

Key Ingredients
- Pork Loin: This is a boneless lean cut that is often sold as a roast (but sometimes can be found sliced in chops). You will need a roast that is 2-3 pounds in total.
- Pineapple: Grab a 20-ounce can of pineapple chunks with juice, do not drain it!
- Soy Sauce and Brown Sugar: I used regular soy sauce to add richness to the sauce, make it savory and delicious, and then balanced the flavors with some light brown sugar.
- Garlic: This recipe uses a lot of garlic. I used 8 medium garlic cloves that I finely minced before using.

How To Make Pineapple Pork Loin in the Slow Cooker
- In a small bowl, combine all of the seasonings (onion powder, smoked paprika, salt, and pepper), and rub the mixture all over the pork loin.
- Heat oil in a skillet over medium-high heat, and sear the pork loin from all sides (1-2 minutes per side).
- Place the pork loin in the slow cooker, and sprinkle the minced garlic all over it.
- To the slow cooker, add soy sauce, and pineapple chunks with juice, and sprinkle the brown sugar.
- Cover with the lid, and cook on LOW for 4-6 hours. Slice or shred the pork, and serve over rice.
