Sloppy Joe Bubble Up Casserole

Ingredients
- 16 oz can refrigerated biscuits I used Grands 8 count
- 1 pound lean ground beef I used 85/15
- 1 medium green bell pepper diced
- 1 medium yellow onion diced
- 1 cup ketchup
- 1 tablespoon light brown sugar
- 3 teaspoons yellow mustard
- 3 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (180°C) and grease a 9×13 baking dish.
- In a large skillet over medium high heat, brown the ground beef and onions and peppers. Cook until meat is crumbled and cooked through and onion and peppers are softened.
- Stir in the ketchup, brown sugar, mustard, worcestershire sauce and garlic powder until well combined and simmer for 3-4 minutes. Remove from heat.
- Separate biscuits and cut each biscuit into 8 pieces. Place into the bottom of your baking dish.
- Pour the meat mixture on top of the biscuits and toss to coat.
- Sprinkle half of the shredded cheddar cheese on top of the coated biscuits.
- Bake in the oven uncovered for 25 minutes.
- Add the remaining cheese on top and bake for another 10 minutes or until the biscuits are golden brown and cooked through in the center.*
- Serve immediately or keep on warm until ready to serve.
Notes
- * if the top of the bubble up is browning too quickly, cover with foil for the remainder of the cooking time.
- Pre-cook the ground beef mixture and store it in the fridge for an even quicker meal.
- Cut the biscuits into smaller pieces for more even distribution.
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months in a ziploc bag.
