This Sloppy Joe Bubble Up Casserole combines classic sloppy joe flavors with fluffy, baked biscuits for a quick and hearty family meal. Easy to make and always a hit!
16oz canrefrigerated biscuitsI used Grands 8 count
1poundlean ground beefI used 85/15
1mediumgreen bell pepperdiced
1mediumyellow oniondiced
1cupketchup
1tablespoonlight brown sugar
3teaspoonsyellow mustard
3teaspoonsWorcestershire sauce
1teaspoongarlic powder
1cupshredded cheddar cheese
Instructions
Preheat oven to 350°F (180°C) and grease a 9x13 baking dish.
In a large skillet over medium high heat, brown the ground beef and onions and peppers. Cook until meat is crumbled and cooked through and onion and peppers are softened.
Stir in the ketchup, brown sugar, mustard, worcestershire sauce and garlic powder until well combined and simmer for 3-4 minutes. Remove from heat.
Separate biscuits and cut each biscuit into 8 pieces. Place into the bottom of your baking dish.
Pour the meat mixture on top of the biscuits and toss to coat.
Sprinkle half of the shredded cheddar cheese on top of the coated biscuits.
Bake in the oven uncovered for 25 minutes.
Add the remaining cheese on top and bake for another 10 minutes or until the biscuits are golden brown and cooked through in the center.*
Serve immediately or keep on warm until ready to serve.
Notes
* if the top of the bubble up is browning too quickly, cover with foil for the remainder of the cooking time.
Pre-cook the ground beef mixture and store it in the fridge for an even quicker meal.
Cut the biscuits into smaller pieces for more even distribution.
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months in a ziploc bag.
