Lime Jello Poke Cake

Lime Jello Poke Cake is a moist, fluffy and light cake that you can serve for St. Patrick’s Day. It’s very easy to make using a white cake mix, while the frosting and green sprinkles make it festive and special!

If you love poke cake recipes as much as I do, then this recipe is for you! It’s so delicious, fun to make and is perfect for any occasion. It’s great for St. Paddy’s Day, but also for Easter, springtime parties and birthdays.

It’s called a poke cake because you’ll need to poke the sheet cake all over using a fork or a wooden skewer, in order to allow the tasty filling to saturate the cake and give it its amazing citrus flavor.

  • Make ahead – you can make this festive dessert ahead of time. Cover it with plastic wrap and place in the fridge overnight. The next day, simply frost and decorate before serving. However, do not let it sit for more than 2 days as it can get soggy.

Ingredients

Ingredients needed to make lime jello poke cake including cake mix, whipped topping, eggs, and jello.
  • White cake mix, as well as the ingredients mentioned on the back of the package (water, oil, egg whites).
  • Jell-O Lime Gelatin Mix and Jell-O White Chocolate Instant Pudding (unprepared).
  • Water.
  • Whipped topping.
  • Green sprinkles to decorate.

How To Make Lime Poke Cake

Here’s how to make this simple but stunning poke cake:

  1. Preheat oven – Before you start, preheat the oven to 350°F/180° and lightly spray a 9×13 baking pan.
  2. Bake – Bake the white cake in a 9×13 pan according to package directions. Once baked, allow to cool completely. Poke holes all over the cake using a fork or a wooden skewer.
  3. Make Jello-O – In a medium-sized saucepan, warm up a cup of water. Remove from heat, and add lime JELLO mix, whisk it in then add a cup of cold water and stir to combine. Set aside.
  4. Pour Jello-O – Pour the lime JELLO mixture into the holes so it soaks the white cake.

  1. Refrigerate – Cover and chill in the fridge for at least 4 hours, preferably overnight.
  2. Make frosting – To make the frosting, in a large mixing bowl, combine whipped topping with white chocolate instant pudding until well combined.
  3. Decorate – Spread the frosting over the top of the cake, smoothing it out with a spatula then sprinkle with your favorite sprinkles.

Recipe Tips

  • Yield: This recipe will make a cake to serve between 12 and 16 people. Since the cake is quite sweet, smaller pieces might be preferred. 
  • Cake mix: You can substitute white cake mix with lemon cake mix to make a Lemon Lime Poke Cake. Alternatively, you can bake your favorite homemade sheet cake to make this recipe. To get the vibrant green color, use a light color cake for best results.
  • Pudding: White chocolate pudding can be replaced with vanilla pudding mixture or sweetened condensed milk.
  • Jello: The flavor of Jello can be changed if you are serving it as a birthday cake or for any other special occasion.
  • Toppings: You can also add or omit toppings as you like. You can add slices of fresh limes, strawberries or berries to have more nutrients and color combinations. Think of red over green for the holidays season!
  • Juice: Add some fresh key lime juice to whipped topping and the cake mix to make a Key Lime Cake.
  • Whipped topping: Replace the whipped topping with buttercream frosting or cream cheese frosting to satisfy a sweet tooth.
  • Food coloring: You can add food coloring to make the cake fit the theme of your party.

How to store a Lime Jello Poke Cake?

You can store it in the fridge covered with plastic wrap for up to two days, as after that it can get soggy. Add the whipped topping and sprinkles right before serving.

  • 1 15.25oz box white cake mix plus ingredients on the back (water, oil, egg whites)
  • 1 3oz box Jell-O Lime Gelatin Mix
  • 2 cups water
