In a medium-sized bowl, combine cream of chicken soup with sour cream and set aside.
In a separate bowl, combine crushed Ritz crackers with melted butter and set aside.
Spray the inside of an 8-quart slow cooker with cooking spray, place the chicken breasts in the slow cooker, then season with salt and pepper from both sides.
Pour the cream of chicken soup over the chicken, then sprinkle the Ritz mixture on top.
Cover with the lid, and cook on LOW for 6-7 hours or on HIGH for 2-3 hours. Garnish with fresh chopped parsley and serve.
Notes
For added flavor, you can mix in some fresh or dried herbs or spices like rosemary, thyme, or smoked paprika to the Ritz cracker topping.
Make sure that you use unsalted butter so you don't end up with a very salty dish.
To make the dish healthier, use reduced-fat cream of chicken soup and sour cream, and serve it over quinoa or cauliflower rice instead of traditional rice or mashed potatoes.
