This Creamy Coconut Christmas Mojito is white as pure snow! It's a simple and tropical version of mojito that's dressed up in its white winter coat and ready for all the Christmas parties!

Ingredients
1-2tablespoonsgranulated sugardepending on how sweet you prefer
8mint leaves
1limejuiced
1ouncewhite rumI used Bacardi
½ouncecoconut rumI used Malibu
¼cupcoconut milk
¾cupice cubes
Club soda
Fresh mintfor garnish
Fresh pomegranate arilsfor garnish
Instructions
In a cocktail shaker or a sturdy glass, combine sugar with fresh mint leaves and juice of a lime.
Use a muddler and crush everything to release mint oils.
Fill the shaker/glass with ice, pour in rum and coconut milk, cover and shake. If using a glass, just stir to combine.
Pour into your cocktail glass, and top with club soda.
Stir, taste, and add more sugar if desired.
Garnish with fresh mint leaves and fresh pomegranate arils or fresh cranberries.
Notes
Rim the glass with melted white chocolate, and crushed candy cane for a beautiful presentation!
I don't recommend making this cocktail ahead of time because there's carobanted soda in this recipe. But the good thing is that it takes just minutes to make!
