Wash and scrub the potatoes if needed. Depending on the size of the potatoes, cut in half or in quarters so they’re about 1 inch pieces.
Preheat the air fryer to 350°F/180°C.
In a large mixing bowl, toss the potatoes with olive oil, italian seasoning, garlic powder, salt, pepper and parmesan.
Transfer the potatoes to the air fryer basket and air fry for 10 minutes, shake the basket to flip the potatoes and cook for 8-10 more minutes or until fully cooked and the skins are crispy.
Garnish with chopped parsley and extra grated parmesan and serve.
Notes
Type of potatoes. You can use any type of potatoes that you want. You can even cut down larger potatoes and make them bite-sized and use them as well. Baby potatoes are a great size and don’t need prep work, but they aren’t the only type of potatoes to use.
Don’t overseason. Be careful adding seasonings such as extra salt because the parmesan is salty as is. You don’t want to add too much salt.
Change up the seasonings. Have fun with the seasonings. If you want to use paprika, onion powder, or even ranch seasoning, go for it! This is what makes this potato recipe so versatile.
Cut evenly. If you do use larger potatoes and cut them down, make sure that you’re cutting them as evenly as possible. The reason for this is that they’ll cook evenly in the air fryer as well.
Add some heat. Spicy potatoes are great! You can easily add chili powder or even red pepper flakes to kick up the heat!
Don’t overcrowd. One of the biggest mistakes people make is that they try to cram too much food into the air fryer. The potatoes need to be in a single line so that the air circulates and cooks them all.
