Easy banana walnut bread made with yogurt and very simple ingredients. It is super moist, soft and fluffy with a lovely crispy exterior.

Ingredients
1½ cups (190 grams)all-purpose flour
½teaspoonsalt
1½teaspoonbaking soda
2eggs
2bananasripe, mashed
½ cup (120 grams)yogurt
¼ cup (50 ml)agave syrup
¼ cup (50 grams)light brown sugar
1teaspoonlemon juice
1 cup (125 grams)walnuts
Instructions
Preheat oven to 355°F (180°C) and grease a loaf pan.
In a bowl, combine flour with salt and baking soda. Set aside.
In a mixing bowl, beat the eggs then add mashed bananas, yogurt, agave syrup, brown sugar, and lemon juice. Mix well until combined.
Combine dry ingredients with wet ingredients and mix lightly with a spatula. Make sure not to over mix the batter.
Fold in crushed walnuts and pour batter into prepared loaf pan.
Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
Make sure that the loaf is completely chilled before removing from pan and slicing.
Notes
Use eggs at room temperature to help them combine with the rest of the ingredients.
Use ripe bananas to get naturally sweetened and moist bread.
Be careful not to overmix your batter. As that can result in a tough and super dense or gummy bread.
Baking soda requires an acid to be activated. In this recipe I've used both yogurt and lemon juice that will activate the baking soda. That will result in a super moist, soft and fluffy banana bread.
You can use any nuts in this recipe. Walnuts as well as almonds work really well. You can also use pecans or hazelnuts.
