This Fiesta Rice is a quick and colorful side dish featuring fresh vegetables, black beans, and a zesty dressing. Ready in just 15 minutes, it's perfect served warm or chilled for any Mexican meal.
Ingredients
For the dressing:
3tablespoonsolive oil
2tablespoonslime juice
¼cupchopped fresh cilantro
1teaspoongarlic powder
½teaspoonground cumin
Salt and pepperto taste
Rice:
2 ½cupscooked long grain rice
14oz canblack beansdrained and rinsed
14oz cancorn kernelsdrained
1cupdiced roma or cherry tomatoes
½cupgreen bell peppersdiced
½cuporange bell peppersdiced
½cupred oniondiced
Instructions
In a small bowl, whisk together the olive oil, lime juice, chopped cilantro, garlic powder, ground cumin, salt, and pepper to make the dressing. Set aside.
In a large mixing bowl, combine the cooked rice, black beans, corn kernels, diced tomatoes, green bell peppers, orange bell peppers, and red onion.
Pour the prepared dressing over the rice mixture. Toss gently until all ingredients are evenly coated.
Taste and adjust the seasoning with additional salt and pepper if needed.
