These broccoli feta fritters are crisp on the outside with a soft center, made using finely chopped steamed broccoli and crumbled feta cheese. They cook quickly in a skillet and work well as a light lunch, simple side dish, or make ahead option.

Instructions
Add the chopped broccoli, feta cheese, eggs, flour, olive oil, garlic powder, onion powder, salt, and black pepper to a mixing bowl.
Stir until fully combined. The mixture should be thick and hold together when pressed.
If the mixture feels loose, let it rest for 2 to 3 minutes or mix in 1 tablespoon flour.
Heat a large skillet over medium-low heat and add the olive oil.
Use a ¼ cup measure to portion the mixture and gently shape into patties.
Cook for 3 to 4 minutes per side until golden brown and cooked through.
Transfer to a paper towel lined plate and repeat with the remaining mixture.
Notes
Squeezing excess moisture from the broccoli is important so the fritters hold together.
Avoid adding extra salt before tasting since feta is naturally salty.
Cook over steady medium-low heat until the centers set without over-browning.
