Instructions
Preheat the oven to 325°F/160°C, and line the bottom of an 8 or a 9-inch springform pan with a parchment circle. Set aside.
In a bowl, combine shortbread cookie crumbs with butter, and press the mixture onto the bottom of the prepared pan as evenly as possible.
In a mixing bowl, beat cream cheese with sugar until smooth and creamy. Add eggs and vanilla, and beat again until well combined.
Pour the mixture onto the prepared crust in the pan, and bake for 50-60 minutes or until the center of the cheesecake is almost set but still slightly jiggling. Switch off the oven, and open the oven door and allow to cool in there for 1 hour.
Remove from the oven, and chill in the fridge for at least 4 hours but preferably overnight.
Spread the caramel sauce evenly over the cheesecake, top with chopped Twix candy bars, and finish off with a drizzle of chocolate sauce.
Run a knife around the edge of the pan for easy removal. Slice and serve.
Notes
Store the leftovers in a sealed container in the fridge for up to 5 days. This cheesecake also freezes very well.
