Easy Vegan Mushroom Stew

You will need:

– Mushrooms – Onion and garlic – Carrots – Vegetable stock – Soy or tamari sauce – Flour – Fresh tomatoes – Oregano and parsley

Step One Sauté the onion until soft and translucent. Add carrots and cook for a few of minutes.

Step Two Add garlic and cook for a minute until it’s fragrant. Then add the flour & mix well.

Step Three Add mushroom and tomatoes. Cook for a few minutes.

Step Four Add stock and soy sauce. Cover and simmer until the carrots are softened.

Serve warm over mashed potatoes, quinoa or rice.
